Can You Mash Potato?

So, it has always been a dream of mine to have a cookbook full of mashed potato recipes... I absolutely love mashed potatoes!! I am leaving for Thailand in two days... if I can bump my ticket up, that is... You see there is this pesky volcano that keeps rumbling about a hundred miles away... if it blows I may be stuck in Anchorage... and I don't even want to think about that, so I am getting out while I can...hope I make it. Anywho... am trying to use up all my awesome veggie treats that came in my Full Circle CSA box last week and I got a ton of potatoes... here are two mashed tater ideas that I just threw together...

Roasted Red Pepper Chunky Cheesy~ness

Ingredients:
4 cups Mashed taters
Roasted Red Pepper chopped in chunks
Shredded Cheddar Cheese
1 tsp Mexican Oregano (crushed)
1/3 tsp Cumin
1/3 tsp Cayenne Pepper
1/4 tsp garlic powder
and 1 tsp white wine vinegar

Make mashed taters: add butter and milk/ sour cream and mash till they are nice and creamy, but still slightly chunky....Roast Red Peppers by putting them under the broiler on high, turning when the sides get black. When they are all black spotted and pretty well roasted take 'em out and put them immediately into ice cold water for a bout a minute then put them in the freezer till they are cool to touch and the skin has gotten wrinkly. Peel skin and toss. Chop pepper, add to taters, add shredded cheddar cheese, Mexican Oregano, Cumin, Cayenne, and Vinegar and mix well....


Spicy Sauerkraut Mashed Taters

4 Cups Mashed Taters
1 cup of drained Sauerkraut (I like Bubbies brand)
1 tbs creamy extra spicy horseradish
1/2 tsp ground mustard
1/2 tsp Hungarian paprika
1/4 tsp garlic powder
and 1/2 cup shredded extra sharp white cheddar (Seriously Sharp Hunters by Cabbot= best)

Mix all the stuff into the taters ;-P This is one of my favorite mashed tater recipes... great at Oktoberfest parties...

Kyle and I are going to take a cooking class in Thailand, so maybe I will come back with some Thai fusion tater recipes... most definitely!

Tomorrow I am making a Moose Goulash!!! This may have to go over the Spicy Sauerkraut taters... just maybe....
